Well getting sick got the best of me! I have been totally MIA lately due to lack of voice, and feeling generally awful. I feel a lot better today, but I’m still basically voiceless. I’ve decided to carry on with my favorite things and simply do a quick Facebook post–much more manageable than going live.

A FEW OF MY FAVORITE THINGS: DAY 1

I thought it would be really fun to share some of my favorite things with you throughout the month of December! This spiralizer is a MUST-HAVE kitchen gadget… in my opinion… and something I personally use nearly weekly. I bought it on Amazon about a year back, and use it to make one of my FAVORITE dishes (you can find the recipe here), Ground Turkey Stuffed Bell Peppers. I’ve also used it to make cucumber salads, fresh spring rolls, and zucchini chips (I HAVE to do a post about these because they are snack attack GAME CHANGER!).

21 Day Fix Extreme + 15k Training Plan

I am gearing up to start training for a 15k coming up at the end of January. I do my best on runs when I incorporate cross training along with running. Don’t get me wrong, if you want to do well on a RUNNING race you gotta run! BUT, cross training is equally as important.

I like to mix up my runs with some strength and cardio training, so I decided to blend the 21 Day Fix Extreme program and my 15k training plan to come up with a hybrid for the next seven weeks! Feel free to follow along with me, or use as needed if you have a race coming up!

How to Create Your Vision Board

One of the most important steps to success is having a vision of what you are working towards. A vision board is a visual representation of your BIG, SCARY goals and aspirations. It should showcase images that will push you forward, and keep you on track.

I went months without creating a vision board for myself because I didn’t know where to start. I googled, read blogs, listened to podcasts… I did everything trying to figure out how to make the PERFECT vision board. Of course, all this did was stall my progress. So finally, I sat down, did a brain dump, printed out some pictures and pinned them up. Is it perfect? No. Are the pictures the prettiest ones out there? No. BUT it gets me off my butt every morning, and pushes me to work hard every night. Remember, progress, not perfection.

So how do you make a vision board? It’s pretty simple! Just follow the steps below:

1. Get a pen and paper and spend 10 minutes doing a BRAIN DUMP of all of your big, scary goals, dreams and aspirations. This can be ANYTHING from a dream Christian Louboutin closet, to a winter vacation cabin in the mountains, to a weekly $$$ goal, to a goal weight! Here are some areas/goals to think about:

  • Family
  • Home
  • Travel
  • Income
  • Fitness/health
  • Work/business
  • Hobbies

2. Now that you have some concrete goals, get on google and find images that match up with them! For instance, one of my goals is to become a 5-star Diamond Coach in my business, so I found an image of five diamonds to depict that goal. If you can’t find a good image, open a Word document and type out your goal and add a fun font and color. One thing I typed out was “Pay Off Mortgage”! I made it bold and pink to make it more ME.

3. Print and cut out all of your images or text, and adhere them to a board that you WILL hang in a place in your home you view daily. I hung mine in my home office/gym because it’s the first room I go into every morning! What a FANTASTIC way to wake up! Below are links to the board and pins I used to make my vision board:

4. Add other important items to your board that you’ll see daily. I personally have my first half marathon medal, a weekly weight tracker where I can record my progress, my current workout program calendar and my business goals worksheet. These are extras that are important to me, and that I want visibility to DAILY. Putting them in a binder, or keeping them as a copy on my computer doesn’t make it REAL enough for me. 5. Hang your board up and SLAY!!! Wake up. Kick ass. REPEAT.

21 Day Fix Sample Meal Plan


I am such a planner. I like to write everything out ahead of time before I start my week. On Saturday or Sunday I sit down and make a plan for what I’m going to eat for the week, and what workouts I’ll be doing. This process takes me about 15-20 minutes, and I actually enjoy it! I love thinking about all the future meals I’ll be having… fat kid at heart over here.

Ok – what should your plan look like? Let me break it down!

  1. Print out a few of these HANDY 21 Day Fix Meal Planner Templates.

  2. Know your calorie target and how many containers you get per day. If you have questions about this message me or your coach!
  3. Plan out your meals and count the containers for each meal so you hit your goal for the day. Tip: I like to write in my breakfast, lunch and dinner first and then use my snacks to fill up on any missing containers.
  4. Make a plan for each day of the week, so you are prepared! Don’t neglect to plan out your weekend! It’s one of the hardest times to stay on track. Tip: I like to do the same plan for 2-3 days to keep the guesswork out, and make meal prep easier.
  5. Make a grocery list of ingredients you need for you meals.
  6. GO GROCERY SHOPPING AND MEAL PREP!

Below is one of my personal sample meal plans. I typically will follow this plan Monday-Friday to keep my weekdays as simple as possible. Weekends tend to be a little more fun as I’ll usually cook family breakfasts, and we eat out at least one of the two nights!

Ground Turkey Stuffed Bell Peppers

I recently found the pre-made stuffed bell peppers at Trader Joe’s and fell in love. They were a complete meal, and very easy to throw together for dinner. What I didn’t like were the macros. They were high in fat and high in sodium. I figured I could recreate them fairly easily. I will usually make these ahead of time, refrigerate and microwave for a quick dinner on weekdays. Pair these with my favorite side, steamed asparagus, and you have a healthy, nutritious, YUMMY meal. Enjoy!

  • 5 Red Bell Peppers
  • 1C Dice White Onion
  • 2 Tbsp Minced Garlic
  • 16oz Lean Ground Turkey
  • 2.5C Cooked Brown Rice
  • 15oz Tomato Sauce No Salt Added
  • 1.25C 2% Milk Grated Cheese (I use Sargento 4 Cheese Mexican)

Pre-heat oven to 325 degrees.

Cook rice according to directions – you need to yield 2.5 cups for this recipe. I will usually cook a large batch for the week and pull from there!

Cut tops off bell peppers and remove seeds and core. Set aside.

In a large sauce pan heat olive oil on medium heat. Add onion and garlic and cook until soft, about 2 minutes.

Add ground turkey and cook thoroughly. Break up the pieces with a spatula as it cooks.

Once the turkey is cooked through remove from heat and let cool. Add the tomato sauce, cooked rice, Mrs. Dash seasoning and cheese. Stir.

Line up bell peppers on a tin foil lined baking pan. Fill bell peppers evenly with turkey mixture.

Cook for 20 minutes and ENJOY!

My Honest Review of the 3 Day Refresh

Ok – I promised I would give you a blow by blow review of the 3 Day Refresh, and when I would recommend trying it. Spoiler alert! IT WAS FREAKING HARD! This is not something I will be doing all the time, but if you need a swift kick in the butt to get back on track I totally recommend this system.

I was extremely happy with my results, both physically and mentally. I feel energized and excited to get back on track with my healthy eating, and crappy food just doesn’t appeal to me after having done the refresh. I’m down 6.4lbs after the refresh and my bloat is GONE.
